3 large carrots, peeled and finely grated, about 1 cup
1 large Fuji or Honeycrisp apple, peeled and finely grated, about 1 cup
For the frosting:
8 ounces reduced-fat or Greek yogurt cream cheese, at room temperature
1/4 cup honey
