No Bake Cherry Delight

This is an old recipe that mom got from a lady who she's known for years. She recently celebrated her 91st birthday I believe, so this recipe goes way back. It is a very easy dessert to throw together and your family will love it. Best of all, you can change the topping up to whatever kind of fruit you'd like. It is another simple and delicious recipe from mom. Let me know what you think about this version and y'all enjoy.

Ingredients:

Crust:
1 1/2 cup crushed graham cracker crumbs
1 1/4 stick of butter melted

Combine these and push into the bottom of a prepared 9x13 baking dish
Bake for 10 minutes at 350°F
Remove from oven and let cool before placing filling.

Filling:
8 ounces Cream Cheese room temperature
1/2 cup sugar
8 ounces Cool Whip 1 container (mom made whipped cream*)
1 teaspoon vanilla extract
2 cans cherry pie filling

Mix ingredients together (minus pie filling) with a hand mixer till well incorporated.
Spread evenly over the graham cracker crumbs.
Now spread the cherry pie filling over the cream cheese filling.
Refrigerate 2-3 hours (or overnight) before serving.

*Whipped Cream:
16 ounces heavy whipping cream
Blend with hand mixer or stand mixer till heavy peaks appear

I use to make this many years ago, to bring to work. I used Neufchâtel cream cheese because many were on diets. Thank you for reminding me of this long forgotten recipe.

Hi Mama Vera and Greg! Oh yum, I love cherry anything. This would be a good desert for Easter and easy too.
I love to get church cookbooks and over the years, I’ve accumulated several and so many good recipes and old time recipes.

I love it. A friend of my brought “cherry delight” to a potluck, and she laughed at me because I had never heard of it, but I thought the dessert was wonderful. So I decided to research this dessert by going to the best chefs in America, our Moms. And, that’s how I found this channel. I am going to get the ingredients and watch Greg’s mom again to help me put it together 😊

Thank you for sharing your Cherry Delight. I will make this for guests on a warm, sunny day.
One thing I want to do is, Im not too awful fond of cherries but love the red sauce.
So, I am going to blend the two cans to a thin pouring sauce. This way, I have the cherries & the sauce. I'll spread it like you did. Spread the cheese mix, I will set aside a cup & half of the cream cheese mix, place in a baggy, snip the tip off, then dollop mounds on top of the sauce, sprinkle with crushed Graham crackers. I will think of Gregs Mom, who was so patient in teaching me this delightful recipe. I will also remember your senior friend, who is 91, who shared this recipe, making it all the way to Montana. Hi! I love this recipe. I got this recipe about 30 years ago from my husband's grandmother, from Illinois. I sometimes substitute vanilla flavoring with lemon flavoring for a no bake cheesecake, it is also very good. She called it her mid-western cheesecake. Both recipes are awesome and a big hit anytime.

Oh my gosh my mom made this so much. I would eat pounds of it growing up. ..so good! She would do half of the pan blueberry filling and the other half cherry. She also put chopped walnuts in the graham cracker crust🤤
