Thanks to Throast for confirming that you do not need to summon Thiollier for the final boss fight to get his gear.
HOWEVER (Spoilers of Final Boss), if you already defeated Leda/Consort Radahn then you cannot do Thiollier’s quest. You can still get the Sword and Flower Head piece, but you cannot get Thiollier’s Set or St. Trina’s Smile Talisman.

Can confirm that you do not need to summon Thioller for the final fight to obtain all rewards for the quest. Hope this helps.

For the dragon priestess just approach her at night after you talk to her for the first time. Give her the concoction and then whenever she wakes up later tell her what you did. After defeating Bayle you can speak to her again and get her as a summon.

Wanted to put a nice tip here, if you plan on summoning a mimic tear, try equipping a poison meat dumpling first, it heals the mimic as much as a flask does, and the mimic is immune to poison so there won’t be any harm done

Fun fact; you never actually need to find the rocks on the sealed spirit spring. You can use Margit's Shackle on them and they open up.

This is because weapon you break the rock the the springs registors a hit for zero damage, which is the condition to open. Margins ahackle also counts as a hit for zero damage.

Heavy armor + Thrusting Sword + Moores greatshield helped me finally beat prime Radahn. The high guard boost of Moores shield ended up being a better choice for the fight than the finger shield. Talismans were all defensive and stamina regen.

You don't need to talk with the NPC first... you could die to St. Trina 3 times talk to npc after it will not break the questline. Only do it before burning the tree

For the final boss of the dlc: Great shield with some Holy resistant talismans and Bull Goat poise, and Antspur rapier (put a cold ash of war on it). The boss is weak to frost and Rot, and a cold infused antspur rapier will have both. Then you just block and poke him and let the rot do its’ job. Good luck!
