Delicious Irish Boxty Potato Pancake

Boxty is a delicious potato pancake made in Ireland. It is a great way to use up left over potatoes.

Ingredients
250 g (1 cup) mashed potato
250 g (2 cups) of grated raw potato
250 g (1 3/4 cups) flour
2 tablespoons of diced green onion (optional)
1 1/2 teasp of baking powder if not using self raising flour
Salt and pepper
1 teap of baking soda/bread soda
300ml/1 1/2 cups of buttermilk
1 egg

Combine to a drop consistency
Fry on hot buttered pan until brown

Very yummy! It has a cute poem on it. " Boxty in the griddle, boxty in the pan, if you can't make boxty, you'll never get a man!!"
