You can add the meatballs to the sauce raw, they become fully cooked and basically poached. They add a lot of flavor to the sauce this way. Any oil that comes to the surface u can spoon off, or use bread to soak it up.

For everyone complaining, this is the recipe as written in Marty's early movie about his family, Italianamerican. The only thing missing is the lamb neck bone.

The melted garlic thing doesn’t really work. Babish also showed it doesn’t liquify. Just smash it down and minced everything to release the garlic oil.

For the meatballs, I like to brown and then stick it in the sauce.

Anthony Bourdain said this was the best way to slice garlic to get the best flavor so I started doing it with a small, sharp, chef's knife. It's the best, Paulie was right.

My mother in law is from Sicily and always put the meatballs in the sauce raw. They always tasted delicious. So tender and perfect. I wouldn’t do it any other way.

Just an FYI- as a child of this era- when in doubt of moisture- dont add water AKA sauce. Just add some EVOO. Besides that, this was pretty close.
