Bakers dozen is based on the size of the loaves not the number. Undersized loaves could lead to a punishment. The extra loaf was to ensure that the total weight was right.

On the baker's dozen. It wasn't the count. There was a weight milnimum subject to fines.

Making rolls is not a 'science', and a baker couldn't t guarantee his dozen rolls would reach the regulated minimum.

By adding the 13th roll, it ensured the weight would be met or at least show good faith if it still came up lite.

Today, we are seeing a deliberated product shrinkage similar to what the bakers were being accused of (thus the weight regulations).

My Grandmother Betty was born in 1941. She told me when she would get in a disagreement in school. They would do the chip on the shoulder thing! And they would fight.

Anybody remember Robert Conrad from the 70's in the advert for Eveready Batteries putting the battery on his shoulder and saying "I dare you to knock this off..." I think it was '77-'78?

The baker's dozen is incomplete. The loaves also had to pass a weight and the fact that wheat was hard to come by, the government imposed a huge fine for shorting their customer by not only the lack of weight but also the amount. To give a patron an extra loaf by the vendor avoided all suspicion of shortcomings by the vendor and was much less of a loss to give that extra away than to get the fine.
