Receta completa/Full recipe:

Instant Pot Albóndigas for 4.

Mix together to make meatballs.
1 lb ground beef
1 Egg
1 tbsp yerba buena
1 tbsp flour
1/2 tsp salt
1/4 cup rice

Blend for Chile sauce:
2 chiles california or guajillos (softened in hot water).
1 garlic clove
1/2 cup water

Chop up favorite veggies into small pieces.
Potatoes
Carrots
Chayote
Zucchini
Cabbage
Cilantro
Etc

Place veggies, 1/2 cup of rice, albóndigas, 1-1/2 tbsp salt, cumin, Chile sauce and water to the Max level indicated in your pot.

Set on pressure cooker to high and cook for 30 minutes.

I got choked up. It's like you got in my head years ago. I used to dislike any caldo with veggies. When I turned 33ish with 2 kids, I went to a restaurant and with out realizing it I ordered a caldo De res. As I was eating it I suddenly realized I was now a Señora, exactly like you said. I even told my husband and he chuckled. Since then I love caldos, usually I eat some time of caldos at least 2 to 3 times a week even for breakfast. You are so right !
