Bonsai Pruning Maintenance - Pyracantha Bonsai Tree

In this video, Jason goes over a pyracantha bonsai tree that he's been working on for the last six years. The tree has been pruned via the clip and grow technique. I have a question, I have a pyracantha and I'm not sure if I could cut or wire the tree without even transplant it, it still has the fruits and they still are green so I just need to know if I'm able too

I find the pyracantha is fussy root wise, how do you overcome this?
