Я так понимаю это желудок.
Мы тоже едим говяжий желудок.
Мы его чистим, какашки ну вот это дермо в внутри желудка, мы выбрасываем.
А они чистили желудок и не выбрасивали это зелёное дермо.
Варили и как суп ели, фууу разве она не воняет, это же отход

We consume the stomach too but we clean the greenish brownish covering of the stomach both inside and out after soaking in hot water with salt. It comes off easily like an orange peel. Different culture different preference.
