I been freezing bread since the 1980s mainly because I am single and buy 2 to 3 loafs at a time so I don't have to go to the store all the time to buy a loaf of bread. This way the bread stays fresh rather than sit at room temperature and get dried out.. Watching this video I have a Better reason to freeze bread. Thanks 👍😊👏

Wow, I do freeze my bread and take out and toast what I am going to use and leave the rest in the freezer. I don't eat bread daily though. My uncle told me this a long time ago and he said toasted bread is easier on the stomach, he was the supervisor over nutrition at the hospital he worked in, he is now is 92 years old and in good health. He still drives and does gardening.

Being a home baker, I have found bread to be one of the great pleasures of life, important to a good meal. A long life has no value in and of itself. I do freeze bread after baking it but not all of it because fresh-baked bread is just a great pleasure. I'm old and been eating bread all my life, have few health problems. Genetics have a lot to do with health fates.

I started doing this because of the price and saving on gas to the store. I actually feel a lot better after about two weeks of doing this without ever seeing this video. This is very good news.

I am a pastry chef, and I learned in school the reason for this: certain starches (especially wheat, potatoes, and rice) go through a structural change called "retrogradation" when cooled, which makes them more rigid (rg also causes staling). Cooling changes the starch molecule's structure, making it "indigestible" or "resistant". This means our bodies cannot break them down as easily, thus they do not contribute to the glycemic spike nearly as much. I'm guessing the Maillard Effect (browning) that happens in the toaster also contributes to them becoming resistant, thus increasing the resistance quotient. Interestingly, retrogradation can be reversed in potatoes and wheat, but not in rice.

I've been diagnosed with diabetes in my late 60's. I freeze my Mello brown seeded loaf, I always toasted straight from freezer and has helped me tremendously. Only read this tonight. Thanks Dr Mandel for confirming. 👍👏

I always freeze my bread, to keep it fresh longer, and use as needed. I usually lightly toast it to deforst it. It's nice to know that doing so is nutritionally helpful as well. Thanks Dr. Mandell!

I always freeze and refrigerate my breads, cakes, pastries and other baked goods. Especially during warmer months and whenever I have excessive amounts.

I do this in order to prevent it from molding. But it’s nice to know that it’s making these foods a little more healthier too.

I'm 55 and I remember my mom having a little dieting book that said that toasting the bread helps you lose weight. I always thought that it was the most ridiculous thing but I learned something new today!

Living in rural Ireland & quite a long drive to the nearest village, I freeze my brown seed loaves - when removed from freezer, they are as fresh as the day they were baked. So this is very good news to me, thanks, Doc❣️

I’ve been freezing and toasting my bread on & off for years purely for convenience reasons, it never goes off that way, so no waste. Never knew it had health benefits before.

I've been freezing my bread for years because I don't eat bread everyday. I only eat it when its toasted with breakfast or on a sandwich. Didn't know about these health benefits but I'm glad I've been doing the right thing. Thanks for pointing this out to me.

Sometimes we do the right thing purely by chance! As a senior living alone, I always freeze the bread to keep it fresh. And since I heard, way back in the 70's, that toasted bread is healthier, and happen to prefer the crispness of toast, I always toast the frozen bread. Happy to hear the good news, thank you!

I store my sourdough bread in the freezer and toast it as needed slice by slice. I'm so happy to learn that's a more health beneficial method.
