Buttery Potato Swirls known as Pommes Duchesse

A French recipe of mashed potato made with butter, egg yolks and nutmeg. It's forced through a piping bag and baked until golden brown. A very classical potato dish in French cuisine.

My daughters are 22 yrs old now. Back when they were 5 or 6 yrs old, I found this recipe in a magazine & made them once. Now, my daughters just brought it up, "Dad, remember when you used to make those swirly potatoes?" They went on about how they used to LOVE them, lol. That brought me straight to this recipe. thank you! i used finely diced green and read bell peppers in my potato mix with some grated parm over the top to make them look like christmas trees. beautiful and amazing! and so easy to do! thank you very much!

Yes. This is the right recipe. I make a whole batch and once they are frozen on a pan I put them carefully in a bag. Quite handy and excellent results with some parmesan on top.
