These moist, deep-gold pumpkin muffins with cranberries are perfect for morning breakfast and afternoon tea snack.


Pumpkin Cranberry Muffins
(6 servings)


Ingredients:
1/2 cup (110g) pumpkin puree
1 egg
¼ cup (50g) brown sugar
2 tbsp (30g) of vegetable oil
1/4 cup (60ml) milk
2/3 cup (100g) all-purpose flour
1/2 tsp (2g) baking powder (Aluminum-Free)
1/4 tsp (1g) baking soda
¼ tsp (2g) salt
1
tsp (3g) pumpkin pie spice
1/3 cup (60g) dried cranberries


(400F/200C) Bake for 20 minutes
