I think at the start, he just liked her voice. But then when he got out of hypnosis, he realized he did truly love her for her. And in the little mermaid 2, we can see he is very passionate to Melody and Ariel!

In the live action they address that. Ariel's voice is magical. She used it to heal Eric after the wreck. When he's under Vanessa's spell you see him fighting it and still looking for Ariel. He loves Ariel.

He was into her voice and the fact that she saved him initially, because of this selfless personality Eric wants to marry the girl who saved him even tho he didn’t know her. After knowing Ariel and having to spend a few days with her he starts falling for Ariel. When she regained her voice he knew that she was the one.

Not at first, it was infatuation with her voice, plus in both movies it shows that he was falling for Ariel without her voice until he was hypnotized by Ursula

Of course he loved her voice, but he didn’t know the girl was Ariel because of the way the light shone on her. That’s why Vanessa has dark hair. Of course, Ursula wouldn’t have known that, but the animators did, and they used that to advance the plot when Vanessa did eventually show up. Vanessa looks very much like Ariel did when she was lit by the sun as Eric looked up at her. Plus, let’s give the poor guy a chance. He’d been unconscious. Since Ariel didn’t know CPR, though I’m sure no one did due to when the movie is set, he had to regain consciousness on his own. He’s lucky!

Also, I think Ursula’s hipnosis also like “forced” him to be like fake in love with her. Like a love potion. They used the voice as a signal of how the curse/hipnosis is controlled. He started by just loving Ariel’s voice, but then fell in love with her truly. You can see in the tour and before Vanessa how he falls in love with ARIEL, not just her voice, and not even having her being the one who saved him as a contributing factor.The live action also helped me see how much too. Some people didn’t like it but I loved it

Well in the movie he started falling in love with Ariel without knowing she saved his life.That is why Vanessa hypnostise him.And he throw away his flute with which he used to make the music Ariel was singing.
