Camp Chef believe their new woodwind pro pellet grill can change my mind about pellet smokers so they've sent me a brand new Camp Chef Woodwind Pro 24 to put through its paces.
I believe anything called a "grill" should be able to ... well, grill. So my inaugural cook on the Camp Chef Woodwind Pro with the sidekick accessory is going to be my favourite steak... the Tomahawk Ribeye. Camp chef provided this grill at no cost.

Chimichurri Recipe
1/2 cup olive oil
2 tablespoons red wine vinegar
1/2 cup finely chopped parsley
3-4 cloves garlic , finely chopped or minced
2 small red chilies , or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili)
3/4 teaspoon dried oregano
1 level teaspoon coarse salt
pepper , to taste (about 1/2 teaspoon)
Sear Sauce
1 cups mayo
1t garlic powder
1t red wine vinegar
1t water (optional)
1/8t salt
1/4t pepper
