Paw Paw Daiquiri
Kentucky meets the beach- or rather Appalachia meets the beach in this daiquiri variation.
Paw paws are native to the eastern United States and Appalachia. They're a cross between a banana and mango. If you were lucky enough to snag some paw paws at the farmers market, you're in luck. If you followed along on Instagram, you saw that I froze some whole. I also seeded and scooped out some and added it to my blender to make puree with my friend. I thought we wouldn't get to making this drink fast enough. Paw paws can be nearly black and sit out on the counter and are perfectly useable, but you do want to make sure you have them to use before they go bad. If you're worried, snag some at the farmers market or from a local tree and stash them in a zip lock bag in the freezer until you're ready to use. If you didn't grab these at the farmers market order puree here to play around with for some cocktails below :
Frozen Pawpaw Pulp - Integration Acres
2 ounces white rum ( we like this cult classic rum for all of our classic daiquiris and their variations as it's affordable and good Wray & Nephew White Rum | Total Wine & More)
1/2 ounce simple syrup plus 3/4 ounce simple syrup.
1 paw paw- scooped out and
seeded
Juice of half of a lemon (1/2 oz too but I didn't measure mine specifically !)
1/2 oz lime juice- juice of half a lime
Make the paw paw puree
Cut in half one paw paw. Scoop out and seed the paw paw.
Combine and place paw paw bits in a blender with 1/2 oz simple syrup and the juice of half a lemon.
Assemble the drink
In a cocktail shaker filled with ice combine 1/2 oz lime juice, the juice of half a lime with 3/4 oz simple syrup (use 1/2 oz. If you want it sweeter as was mine in the video) , 3/4 oz of your puree, and 2 oz. of white rum. Shake until it is so cold that you can't hold your shaker. Strain into your glasses. I used coupe glasses. Garnish with lime wedge.
TIP : If you don't have your glasses pre- chilled and don't have the freezer space. Put ice in them with a little splash of water. A friend used to do this in her restaurant for martinis. Discard ice and pour in your drink!
