How to make Mexican Sliders - the best brisket and chorizo burgers!

Welcome to the Mothership! Today we are are making what could be my absolute favorite sliders! These are heavily Mexican inspired with a mix of ground brisket and chorizo, topped with a home made pico de gallo and cilantro lime crema, all on kings Hawaiian buns. You absolutely need to make these at home. Lets get started...

Ingredients:
1 Lb Ground Beef (brisket)
.5 Lb Ground Pork (shoulder usually is best)
Hawaiian Slider Buns
Mexican Cheese Blend

Seasoning:
2 Tbsp Paprika
1 Tbsp Garlic Powder
1/2 Tbsp Chili Powder
2 Tsp Cumin
1 Tsp Oregano
1 Tsp Coriander
Dash of Cinnamon
1/2 Tsp Kosher Salt

Pico:
2 Tomatoes
1/4 White Onion
1/4 or more Jalapeno
~1/4 Cup chopped Cilantro
Juice of Half a Lime
Salt and pepper to taste

Cilantro Lime Crema:
1/2 Cup Sour Cream
~1/4 Cup Cilantro
1-2 Garlic Cloves
Juice of 1 Lime

I was at an international market yesterday looking for inspiration. I about picked up 5 lbs of chorizo to be a bit on the lazy side (in reality I was looking for cheeks, tails, or hooves to be next to nothing) But now that I see this, I remember I can get a keto Hawaiian Roll at a local market here. Would have fit the bill perfect. Great cook, thanks for sharing!
