I tried this for the first time yesterday and I’m not sure if I’ll ever go back. Unless you get a very good top-choice or prime-cut tri-tip, it can be a very tough piece of meat cooked at medium or medium rare. This was just pull apart, tender and so flavorful

This method works great on tri tip. You can do the same thing with chuck steak. Both cuts are a little more expensive than brisket, but there is much less shrinkage since less fat is rendered on the leaner meat. Also try using pecan, almond, or oak instead of hickory for a softer, less acidic flavor.

I believe the butchers pepper is same as the 12 mesh pepper...

I always find choice tri tip with a nice fat cap on it at Walmart. a little pricey though. 25 bucks average.

While I don't mind the "trisket" - I'd still much rather reverse sear tri-tip like a steak and keep the "poor" man's version to chuck roast.

Unfortuenly I dont think this worked. The tri-tip hasnt got the internal fat to support this method of cooking. You can see it is just very dry. You need to research the Brisquetta which is what I think you are trying to mimic with this cook
