I love the design of the republic trooper armor, it looks “practical” and somewhat modular

That's would be the in universe explanation. The out of universe explanation is that the devs wanted to evoke the feeling of the clone troopers.

In ww1, Great Britain, France and Germany used some similar helmet designs to their middle ages helmets so it's ok

I mean we see similar stuff even now a days with older medieval or even traditional samurai esk armors being adapted into modern armors. Not on a military level but in a hey we think it looks cool sense.

Man, I absolutely love Clone armor, but there’s just something so freaking cool about the Old Republic troopers armor.

I like the old republic designs, especially for ships. All the technology tends to be blocky and slower while also invoking similar modern Star Wars designs.
All the fighters are larger than the modern ones and the navy is largely built up of cruisers and frigates. Like the harrower class which was the backbone of the sith’s navy was around half the length of a imperial 2 star destroyer. And it helps show some technological growth between then and the modern Star Wars era.

Both armor concepts were made from the mandolorian armor idea, it’s very common to adopt enemy ideas because they are better

I purposely outfitted my Trooper in SWTOR like an Arc Trooper because Clone armour was so cool.
