Asian Turkey Noodle Soup
Prep Time: 15 min.

Total Time: 30 min.
Serves: 6 | Difficulty: Easy
Ingredients:
8 cups Kroger® Chicken Broth – Reduced Sodium
2 cups water
1 cup thinly sliced onion
2 Tbsp. Kroger® Soy Sauce
1 Tbsp. grated peeled gingerroot
2 tsp. brown sugar
2 tsp. Asian fish sauce
8 oz. shredded roasted turkey
4 oz. vermicelli rice noodles
4 green onions, sliced and divided
Juice of ½ lime
1 cup fresh bean sprouts
⅓ cup chopped fresh cilantro
1 jalapeño pepper, sliced
Directions:
1. In a large pot, combine broth, water, 1 cup onion, the soy sauce, gingerroot, brown sugar and fish sauce; cover. Bring to a boil. Reduce heat. Add turkey and noodles; cover. Simmer 5 minutes until onion and noodles are softened. Stir in ¾ of green onions and the lime juice. Cook 5 minutes until heated through.
2. Ladle soup into bowls. Top each serving with remaining green onion, the bean sprouts, cilantro and jalapeño.
3. Refrigerate leftovers.
Turkey Cranberry Quesadillas
Prep Time: 10 min.
Cook Time: 10 min.
Total Time: 20 min.
Serves: 4 | Difficulty: Easy
Ingredients:
4 8” Kroger® Flour Tortillas
6 Tbsp. Kroger® Whole Berry Cranberry Sauce
¼ cup dried cranberries
4 oz. shredded roasted turkey
4 oz. shredded Monterey Jack cheese
2 green onions, sliced
Directions:
1. Lay 2 tortillas out on a work surface. Spread each with 3 tablespoons of cranberry sauce. Sprinkle each evenly with 2 tablespoons of dried cranberries, 2 ounces of turkey, 2 ounces of cheese and 1 green onion. Top with remaining tortillas.
2. Coat a large skillet or griddle with cooking spray; heat over medium heat. Gently transfer 1 quesadilla to hot pan. Cook 3 minutes until lightly browned and cheese is starting to melt. Carefully flip quesadilla; cook 2 minutes longer until browned and heated through. Repeat with remaining quesadilla. Cut quesadillas in half to serve.
Mashed Potato-Cheddar Waffles
Prep Time: 10 min.
Cook Time: 30 min.
Total Time: 40 min.
Serves: 6 | Difficulty: Easy
Ingredients:
¾ cup Kroger® all-purpose flour
½ tsp. baking powder
¼ tsp. baking soda
3 cups leftover mashed potatoes
3 Tbsp. milk
2 Tbsp. butter, softened
8 large eggs, divided
1 cup Kroger® Shredded Cheddar cheese
Directions:
1. In a large bowl, whisk together flour, baking powder and baking soda. Stir in mashed potatoes, milk, butter and 2 eggs until blended. Gently fold in cheese.
2. Heat waffle maker and prepare waffles according to manufacturer’s directions.
3. Meanwhile, coat a large skillet or griddle with cooking spray. Crack remaining 6 eggs onto skillet. Cook until desired doneness. Serve waffles warm topped with eggs.
