Aji Cachucha Peppers have many applications in cooking. They are used a lot in Cuban, Puerto Rican, and Dominican Republic cuisine. They can be use to flavor rice, beans, soups, stews, and much more. I'm from Puerto Rico. We use it in the making of sofrito. Its usually used in almost every dish. PR version of Mirepoix. You can freeze the sofrito in ziplock bags and just break off a piece when you need it.

Use this in Cuban food. This is really necessary for black beans. And a core component in Cuban criollo sauce:
Tomato sauce (canned), onions, smashed garlic, cachucha peppers, white cooking wine, powdered oregano, cumin, salt and pepper. That's it.

These are fantastic roasted and canned. I made chili with these when roasted and from canning last season. Both ways were delicious and it added some depth to the chili. A beautiful and well-rounded pepper for the garden.

Pretty looking pepper. Never grew that but finally my peppers took off beginning of August. Been getting a lot of jalepeños and cubanelle and hungarian sweet. I fry them every morning with eggs and they are delicious. I'd like to try some different varieties next year, definitely Jimmy Nardello.

Really happy to see this video. Our A. Dulce this year was a bad grow(our fault) so we won't get to try them but high on our list for next year. Looks like a mild to no heat type that would be great for cooking. My mind keeps heading towards drying and crushing for pepper powder as well. Great grow. Thanks for the share!

What a great looking plant. Very healthy and productive. The pepper looks as though it would be really hot, but it sounds like it really isn't. It's a very interesting shape too. I haven't grown that variety. I did grow the Adjvarski peppers last year, I didn't get many. Some insect decided they liked it more than me. When it started to turn red, an insect bored holes in the pepper and ruined it. I just might try growing this one since we like sofrito. Thanks for sharing this variety of pepper.

Nice I’m really excited I am just starting to get peppers and cucumbers off our plants because we have tried 2 or 3times already this year and up till now it has been a fail I guess it is from all of that heat we had down here, thank you Jim for posting videos of all of the varieties of peppers that are out there that I didn’t even know about it keeps thing interesting in the garden even when after a few years a garden just becomes one of those chores you always have those few experiments to look forward to

I saw this on the Baker Creek Seed website and was interested because of the great reviews. I was looking for an alternative to bell peppers this year and hoped I could get these to ripen a bit easier. Thanks for the taste test and information! Getting my transplants in the ground today!

Interesting.I hope someone has cooked with this pepper. I grew one pepper this year called avjarski, a roasting pepper. You put it in the broiler with some oil and remove the skin, and is added to sandwiches. It has a strong delicious taste. So different tasting and so good!!

My Cuban family uses these to make sofrito, especially for use in black beans.

You mix these peppers with onion, garlic, some cubanelle pepper, cilantro, a bit of lemon juice and you make it the base of any stew you plan to make.
