I have actually done this for ages now 😄
My parents would always do this when we needed to put the chicken in a sauce or whatever. So the skin wasn't just soft they would remove it and then do this and add it to the dish once its ready.

Here in the philippines, at the supermarket's frozen section, there's an option for just the chicken skin. You can literally buy a kilo of it. And yes, it's the best chicken part! The crisp, the flavor plus when you dip it in gravy is everything
