Kakarakaya Fry || KARELA Fry|| bittergourd Fry is a popular diabetic
recipe prepared with vellulli karam. Kakarakaya Fry is served with
steamed rice for lunch and dinner ,chapati with , rotis.

Ingrediants
1/4 kg bitter gourd
Salt To taste
1 onion [ Finely chopped]
oil for deep fry
2 tsp red chilli powder
Tamarind [Small Lemon size]
Butter milk - 1 cup
Pinch of hing
For tampering:
• Curry leaves - 1 spring.
• Red chilies - 2 number.
• Turmeric powder - 1/2 tea spoon.
• Mustard seeds - 1/2 tea spoon.
• Cumin/jeera - 1/2 tea spoon.
• Channa dal - 1 tablespoon.
Method: In a thick bottomed vessel , add bitter gourd ,Tamarind [Small Lemon size],salt - 1 tsp,Turmeric powder, Butter milk - 1 cup,and boil for 10 minitues under medium flame until buttermilk vapours.
2.Heat sufficient oil in a Kadai ,drop bitter gourd pieces in to hot
oil and fry it on a medium flame.
4.Repeat the same process for remaing bitter gourd pieces.
and fry it on a medium flame.
5.In same pan add chana dal,mustard seeds,cumin seeds , dried red chillies saute it.
6.Add chopped onion ,add curry leaves, turmeric powder,add salt , hing
8.Add vellulli karam [ For vellulli karam : In a mixie jar add jeera,
garlic cloves , dried red chilli & blend it ].
9.Again fry until the bitter gourd are fried well.
