The production of a family of high quality balsamic vinegars was a challenge Domaine Costa Lazaridi successfully rose up to. From the beginning of the 00’s following several years of trials and experimentations, presented the two top labels of the family which were supplemented later by four more.

Aceto Botanico White, without barrel ageing, which allows it to maintain its blond colour. Made with concentrated grape must from selected semillon grapes and wine vinegar from the same variety.

Aceto Botanico I, with a short stay in oak barrels which increases its concentration and aromatic intensity. Produced from the grapes of our private vineyards.

Aceto Botanico II, coming concentrated must and wine vinegar from the Estate’s grapes which are blended and aged in oak barrels. The extended contact with the wood adds to the aromatic complexity.

Aceto Botanico Brown Seal, where the must from selected white grapes from Drama yields concentrated must and wine vinegar which are blended, aged and become a true gastronomic product.

Aceto Botanico Red Seal, characterised by high concentration and complex aromas and made, as the rest of the family, using selected grapes from our private vineyards.

Aceto Botanico Gold Seal, the pride of our vinegar range. Using the technique of the Aceto Balsamico Traditionale of Modena we create the special balsamic vinegar which ages for a total of 10 years. Just one drop can transform even the simplest dish.
