I always enjoy the Almazan videos. The only thing that makes me concerned about this video is the "blue" cheese. I have read some of the comments that say the blue is from the wild mint. Mint does not color food blue or green. I am concerned that the blue color may be a chemical reaction from the copper skillet mixing with the tomato sauce and cheese. If this is right then I'd recommend tinning the skillet so that the copper bleed through does not become poisonous. Of course eating a little of it won't hurt but copper poisoning is a serious concern. But....I have all kinds of skillets that I can use without worrying about the copper. So I take the idea and watch the video with much appreciation!
