Pesto (Italian way):

One garlic clove, green shoot removed
1/2 tsp rock salt
30g of basil
three tbsp of pine nuts
1/2 tbsp of grated pecorino sardo
Four tbsp of parmigiano
Four tbsp of extra virgin Olive Oil

Done in a mortar and pestle so nothing heats ip and cooks. Pine nuts are not roasted.
