LASAGNA DEBATE: Ricotta Cheese VS Cottage Cheese?

My wife made her famous lasagna tonight and it made me super happy because her lasagna rules! But it brought up a debate that I have heard for many years. Ricotta cheese or cottage cheese? Which camp do you fall in?

I never knew that cottage cheese could be used until today. Today, I purchased cottage cheese in error and I do not want to go back to the store so I used it. Recipe came out fine (and has fewer calories).

I don't like cottage cheese at all. However, the only time I eat cottage cheese is in lasagna because it doesn't taste like cottage cheese when baked in lasagna, I like how it strings after it's baked in the lasagna and how it adds moisture to the dish. :-). I've never like ricotta cheese in lasagna. It has a dry texture to it. Of course I do use other cheeses too like provolone, mozzarella and fresh grated parmigiano reggiano. I don't remember my mom making lasagna. I'm sure she did though. I'm glad to know I'm not alone in preferring cottage cheese in lasagna :-).

I like em both. I grew up on cottage cheese lasagna so i make it with that often. I actually made some today with cottage cheese and ground venison as my meat. Its good

Definitely ricotta cheese! Never had it with cottage cheese but it sounds strange. I didn't even know it was a thing!

Ricotta is much easier to work with because of its consistency. However, if its unavailable, you can use cottage cheese with equally good results by adding an egg and blitzing the mixture to get a cream-like consistency, so it doesn't form "curds" in the oven.. That being said, no lasagna is complete without the addition of layers of mozzarella and Parmesan-regganio. So yes, a combination of 4 cheeses together supplemented by a home-made beefy tomato sauce (well seasoned with basil, oregano and peppers), makes for a fabulously rich and delicious lasagna!

I'm 19 and I make the best lasagna in my whole family (pretty big family) lol but yeah once I was curious and tried cottage cheese. I went back to Ricotta no questions asked.

I never heard that somebody use cottage or ricotta cheese in lasagna...at all. This is the first time I heard this

Cottage cheese all the way! My mom learned how to make lasagna from our Italian neighbors when we were stationed in Vicenza for 3 years. They used ricotta...BUT...when we got back to the states, ricotta cheese was more expensive so she substituted cottage cheese and our family recipe was born. I personally like cottage cheese better since it's not grainy and sets very nicely.

My mom used cottage cheese.  Grew up in the south and not sure how easy it was to get ricotta at the Winn Dixie!   I make it with cottage cheese as well.  Tried it with ricotta and it was good, but didn't have that homemade mom flavor I grew up with.

Cottage cheese and ricotta are actually the same; ricotta just has a finer curds. I love both and it depends how I feel I want my lasagna. Smoother and creamier; ricotta. With a bite and to be more filling; cottage cheese.

i use ground beef, and italian sausage in my sauce, the cheese i use is cottage, good Parmesan, mozzarella, and cheddar for color and it is delicious

Like where? As topping, or in between the lasagne sheets? I don't use either! My lasagne goes like this, ragout, sheets, mornay sauce, mozzarella cheese, repeat for 3 or 4 layers. I always start with ragout and i always finish with ragout. When done i top the lasagne with red cheddar cheese and some parmesan.

i love cottage cheese ...my mom used to make ours homemade with cottage cheese and i still think about it 25 years later

I've always used ricotta and it's been awesome! I'm about to use cottage cheese today for the first time? There must me a lasagna craze going on in America right now because I could barley find noodles and couldn't find ricotta in 3

I like both but we always used cottage cheese growing up. Also, I have to use beef (not a fan of sausage).

I use both cheeses, along with cheddar, and asagio, and Gorgonzola

Neither, I use Monterey Jack, Mozzarella and Parmesan. Everyone I have made this for, Loves it!😋 They all say it's the best lasagna they have ever had. I will try the cottage cheese just to see what it is like.
