Hi guys, my name is Ilya, I am a chef.
I have been cooking in restaurants for 22 years.
I decided to analyse this simple Spanish recipe from the Chef's point of view.

Ingredients (for 10)
2.5kg ripe plum tomatoes 1.59€ (all prices per kg)
500g cucumber 1.45€
250g onion 1€
250g green or red bell pepper 2.5€
15g garlic 6€
300g extra virgin olive oil 6€
25g vinegar Jerez 5€
22g salt 0.25€

I put prices per kg, so you can calculate the costs easy, using any dish cost software or just an Excel spreadsheet.

Based on these prices, the cost of one portion was 0.76 € per portion.
This dish has very good profit margins.
I forgot to mention - waste. It has no waste during service (like some other soups have), good shelf life and low costs. Ingredients are not expensive, great not only for customers but also for staff.
