you have used E = mc^2 instead of the full equation E^2 = (mc^2)^2 + (pc)^2. photons are massless, so i have no idea what momentum the particles must have (since it's zero mass to mass existing). the energy of the particles would depend on their momentum too. the photon does have energy, but it's energy is purely due to its frequency.

The energy of the gamma photon should be at least equal to the rest mass of the produced particles.. Any extra energy will be added to their kinetic energy, also the momentum of the photon is equal to the produced particles total momenta, so upon the high energy gamma photon interact with the nucleus, it will undergo the creation process and that's how matter of stable particles pop into existence and other unstable particles will decay immediately.
But the big question is why there are more matter than anti matter since every creation process produces equal particle from each one. 😅

This is called "creation" which is opposite of "annihilation". If you want to know frequency of the photon, you would need E=hf and I guess this all is under elastic collision🤷‍♂

Same goes for more common phenomena electron and positron pair production from less energetic gamma photon than this one which produced protons pair.

A proton plus an anti proton seem kinda heavy to be made from a photon. I'm guessing you assumed 100% efficiency?
