The main theme song of the series is from Gru's perspective and it's extended version contains the lyrics: "Why does Vector think that he's smart, _and does his dad know I know his part?_ " If it's to be taken as hints to the lore, Gru *knows that something* is going on.

I always thought that maybe Miss Hattie owed the bank of evil money. Like maybe she tried to make it as a villain but couldn't, and so left with an outstanding loan that was probably to pay for her building (formerly her secret lair), she opened an orphanage so she could claim taxes on it and get paid by the government, and then used it as a front to slowly pay back her loan through seemingly innocent acts such as selling cookies. That's why she's so insistent on the girls meeting their sales targets; the less they sell the longer she'll take to pay it back, and the more interest she'll owe.

One thing in your miss Hattie theory I found is that el machos son goes to salsa salsa too get a cookie. He gets everything free in a restaurant and chooses cookies, they must be really good. Miss Hattie sells cookies that judging by the amount that vector buys are really good. There could be a connection here but I dunno
