Japan sometimes works on a “Honor System” this is why they can have an un-manned store.
Tbh there is many stores like this all across Japan. It’s super cool and if you have a chance I’d advise you to go (:

I was in a small town in the US, there was a book store that operated the same way. You'd pick out your books, find the category on the price chart, and pay cash, or even swipe your card. It was nice to see.

In Illinois we have farmers and local bee keepers who still use the honor system with their stands. This is something you mainly find in small towns though.

Unmanned, doesn't necessarily mean its not monitored. Would bet there's cameras in there. That and having it brightly lit and open to the outside helps keep people honest.

I was born in Brazil and it wouldn’t last a day over there too, but, it is a normal practice here in Japan. Not only that gyoza shop. The first time I saw sales based in trust was in Kyoto, there were veggies in plastic bags and a box where you should put the money.

It’s called the honor system we have this in some rural parts of the south usually it’s farmers that sell vegetables on a stand on the side of the road and you pick out what you want and then leave whatever you think is an honorable amount of money. Some of them do have prices but not all.

Prince did a concert in Japan where they were filming a video. They put tambourines in the first three rows of seats so the people sitting there would look good in the video. After the concert was over, every single one of the tambourine that was left on the seat. Prince said they didn’t expect to get a single one back, and they got all of them.

There’s a used book store near where I live here in Canada, that works on the honesty system too. It’s a cool concept and I hope the owners don’t get ripped off.

There's an unmanned store just like this that sells milk, cheese, eggs, and ice cream on a farm near me. I live in rural Ohio. It's a family business and they're too busy running the farm to worry about running the store too. You have to write down what you took and what your total was. Then you put the money in the box and take your items.

In Switzerland we have a lot of unattended tiny stores that farmers put up, they sell produce, baked goods, homemade jams, dried fruit, meat, eggs, etc, there's even one or two in my area that has a coffee machine and a couple chairs :D and most of them upgraded so one can pay with their smartphone as well
