I love that Sam Witwer is basically THE authority on Star Wars lore and trivia. As for the inconsistencies, it's all about framing. If you've made it clear that there's an unreliable narrator, then it's all well and good to have a couple inconsistent details as long as characters stay themselves. But if it's framed as "here is the correct and infallible truth of you seeing this yourself as it's happening, " then inconsistencies just become something that has to be explained properly or it just seems like someone didn't know what they were doing.

I understand where he’s coming from if it’s narration style but I think the audience prefers continuity

You can have minor differences, but the story must be consistent. That is how you maintain continuity and prevent plot holes .

If it was "the compiled legends of star wars" inconsistencies could be considered a bonus. You could write as though the stories are in-universe legends being passed around. But when it's "this is the official canon, watch it unfold in real time in front of you. This is what happened." those inconsistencies are now flaws and have 0 positive aspects

"it's better if things are different. Consistency doesn't matter" seems like a polite way of saying "screw all the hard work you put into writing this. I want to do something else instead. You don't like me ruining your work? Oh that's okay. It's better if things are different"
