Crockpot Ropa Vieja! 🍽

Don’t you love a good set it and forget it meal? 😂 Let the Crockpot do all the work for you!

This Cuban Beef Stew aka Ropa Vieja is so tasty and super easy to make!

Ingredients 📝
Flank Steak
1 cup beef or chicken broth
6 oz. tomato paste
1 can petite diced tomatoes
1 1/2 tsp. salt
1/4 tsp. pepper
1 tsp. oregano
1 tsp. cumin
1/2 tsp. turmeric
1 Tbsp. apple cider vinegar
1/2 onion diced
2 bell peppers diced 1 green 1 red
1 cup Spanish olives
3 garlic cloves mashed

Directions🍴
1. Add the broth, tomato paste, and diced tomatoes to the crockpot. Then add the steak and flip it to get coated on each side.
2. Season with salt, pepper, oregano, cumin, turmeric.
3. Add the bell pepper, onion, vinegar, olives, and garlic to the crockpot and mix.
4. Cover and cook on low for 9 hours on or on high for 5 hours.
5. Shred the meat with 2 forks in the crockpot and serve!
Serve with rice and avocado. 😋
