Good morning Chris. I almost always cook my potatoes for a few minutes in the microwave or boil them to ensure everything cooks properly. This looks marvelous. I’m not a fan of cooked spinach although I love it raw. I may try to substitute some kale and hop it doesn’t change the flavor.
