d/dx((t^3) - (27t)) is 3t^2 -27 and not 3t^2 -27t as per subtraction rule d/dx(u-v)? It should then be t^2-9=0 and then t = 3 and not 9?

The last application, sir did was wrong. Although the full video, whatever he instructed was absolutely important. So, at least go through it once.
The last application I'm doing for people who got confused with..

d'(t) = 3t³-
V=3t²-27
3t²-27=0
3t²=27
t²=9
t=3
Velocity will be 0 if time t =3sec
Again, differentiate equation (ii) with respect to t
dv/dx= 6t
At 3 sec acceleration =6×3
=18m/sec
