I have recently purchased a La Marzocco Linea Pb for my coffee shop, what is the ideal time of extraction 17, 5 grams of coffee for a single espresso and for a ristretto? Also which button do you recommend to use, single cup button or double cup button? I have been told for a ristretto I should hold the single button till the extraction begin, what do you suggest?
