Ingredients (dessert weight 800 grams, pan size 30 * 40 cm (11.8 * 15.7 inches)):
Meringue
190 grams of proteins (6 medium egg whites)
1 tsp (5 ml) lemon juice or a pinch of citric acid
a pinch of salt
250 grams of sugar
25 grams cornstarch
Filling (tangerine curd)
zest of 4 large tangerines
300 g tangerine without peel
30 grams of sugar
2 yolks
20 grams cornstarch
Cream
250 grams of cold cottage cheese or cream cheese
100 grams of cold cream with a fat content of 33%
15 grams of powdered sugar
10 grams vanilla sugar
Bake the meringue in a preheated oven on medium for 25 minutes at 150°C (302°F) or 35 minutes at 140°C

delicious. beautiful. but... it is eaten in 5 minutes, and cooked in 5 hours. it looks like the name indicates the time of eating the roll. 😉
