Vegan and gluten free Chickpea Tofu Recipe
Ingredients:
• 1 cup chickpea flour
• 3 cups water
• 1 tsp salt
• 1 tsp turmeric
• 1 tbsp nutritional yeast
• 1 tbsp lemon juice
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp cumin powder
• 1 tsp paprika
• 1/2 tsp black pepper
• 1/4 cup chopped cilantro (optional)
Instructions:
1. In a large bowl, whisk together chickpea flour, water, salt, and turmeric until smooth.
2. Pour the mixture into a medium saucepan and heat over medium heat, whisking continuously.
3. Add nutritional yeast, lemon juice, garlic powder, onion powder, cumin powder, paprika, and black pepper to the mixture.
4. Cook, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan, about 10-12 minutes.
5. Pour the mixture into a greased 8x8 inch baking dish and smooth out the top with a spatula.
6. Let the chickpea tofu cool to room temperature, then cover with plastic wrap and refrigerate for at least 1 hour or overnight.
7. Once chilled and firm, cut the chickpea tofu into squares or triangles and pan-fry until golden brown on both sides.
8. Garnish with chopped cilantro, if desired.
