My nonna is from Bari and she actually uses quite a lot of garlic in some dishes. Like with green beans, chicoria, bietola, brasciole, and roasted lamb.

The French use way more garlic than the Italians do, except for bagna cauda. That dip is the bomb!

I watch several different Italian cooks, even grandmas and they all cook with garlic differently.

We love garlic and it’s very good for you! Try storing garlic with Raw honey and after a month use the Honey for dressing to add a pop of garlic without it being overpowering. Eat a clove or two of this fermented garlic as an immune booster.

Do you have a favorite variety?
I accidentally chose four kinds of garlic to grow years ago, that are all super string. Lol, now I don’t want to give $10 for each head of seed garlic to totally refresh my stock for planting this year. 😭
Love growing my own. Going to have to shell out!

I'm not Italian at all, but I remove the core of the garlic unless it's going to be a long slow cook. No one even taught me to do it that way. I also prefer hard neck garlic, which has larger more mild cloves. So I can use a lot of garlic without it punching you in the face. I guess I really love the mild, sweet side of garlic, rather than the pungent and sharp side.
