2:27 leaping and landing is also something to factor in ( while Usain takes his strides his speed will change- his speed only increases when he takes a leap forward not when he is in the air/ landing so the graph will probably more realistically have more of an up and down shape following the general trend of the graph.

Showing the Desmos graph in the end is a fantastic approach to setting the stage for understanding the intuition . Post a link to it if you redo the video.
