Analysing this setup, I realise why it is so effective.
He places his two most powerful weapons (corn cannons, gloomshrooms) in a safe medium which is the pool. No digger zombie to deal with, no gargantuans, no zomboni, no catapult zombies. And they can provide support to lanes outside the pool. In military terms, he has heavy artillery support from an impassable hill (metaphor for pool) which beats down any strong enemy units.

I did something like this to reach 1000 flags but it was much less elaborate. It had no space for the zombies to walk on unless it was a spike rock and the gatling Peas were all at the back

Rows 2 and 5 have no torchwood. I can tell that the purpose is to not have fire peas, cause that cancels the slow from melon, but that's not worth it. The extra dps from the slow+glooms is prob not worth swapping the melon for a torch, which equals 4 gatlings and 16 regular peashooters. On the otherhand, if you observe rows 1 and 6, the splash from winter melon slows those rows as well, but the fire peas unfreeze the first zombie in those lanes, and yet the weaker outer rows (without pool gloom damage) are sufficient. You could argue that the winter melon is supposed to slow the zombies behind the first gargantuar, making it worth it. There is the option of keeping the winter melon and replacing the gatling pea with a torchwood.

Using this exact same strategy i survived 66 flags... It would have been cooler if i got 69, but the zombies slowly destroyed everything in the 66th wave. But i played in last stand endless

This strategy may be improved,
i have some points u may consider about.
1. The position of two cattails, they are used to kill balloons but two cattails at 3 columns may let balloons land on cobs.
2. Gatling peas on row 2 and 5, may not provide stable damage because if gargantuars are in front and Jack In Box zombies are behind then there will be a big risk, so i think put fume-shroom at (2, 6) (2, 5) and (5, 6) (5, 5) is better and winter melons can be put behind.
3. Bungees. There may be risks at (3, 1)(3, 6) which u may not use ice shroom to kill bungees( I didn’t calculate this is by my experiences)
4.Jack-In-The-Box zombies. There are two types of JITB zombies: early explode and late explode, The earliest time that it explodes is 430cs(4.3s) for early explode and 13s for late explode since it refreshes, general ways to control it are by ice shrooms, nuke(Doom shrooms) and jalapeño with cherry. How are u going to control the explosion?

I always had a problem with giga-gargantuars. My winter-melon setup + gloom shrooms(in the pool) helps a little bit against them, but I cant survive without insta-kills

Winter Melons as your main weapon are also good, it will slows down the zombies and the same time, it deals a massive damage
