thanks for the video, but the Option Pantone + Solid coated doesn't appear to me, any advice?

Great video, thank you! Just a question, does it matter what colour space the document (ex. Illustrator) is in, when converting/using Pantone colours? Can the document file stay as RGB colour profile? Or does it have to be switched to the CMYK colour profile when working with Pantone colours? Thanks!
