I had the pleasure of meeting Chef Rush at a veterans event in Vegas during SHOT Show. What an incredible human being he is.

He is absolutely delightful and incredibly kind, he took a moment to chat with everyone who wanted to meet him which he didn’t HAVE to do.

It’s not every time that people are so awesome when you meet them in person, but Chef Rush was just an all-around stand-up guy and it was an honor to meet him. He is exactly as cool as he seems.

For kidney, all the parts of calyx and pelvis (renal medulla) need to be removed. I think the best part was seeing Chef Rush beast through all those "punishments" at the end. Also, I would have to agree that organ meat is also one of my least favorite flavors regardless of how it's cooked but I still appreciate the effort.
