I'd highly recommend Rogue for this boss.
Higher survivability if you get hit as well as being able to have burst dmg. If you know what the mechanic threshholds are, you can start spamming poison dagger right before it and you can easily deal another billion or 2 of his HP while he is underground (even on wave 100 I managed to deal enough damage to break 2 threshholds in 1 burst so he just burrows as soon as he surfaces again).
It's kind of sad seeing how there are only 2 viable choices for this boss, Rogue and Huntress being the 2 obvious choices. But since Irradiate is the main damage source I managed to kill this boss with Apprentice and EV as well (however only on Mixmode wave 25 because I like my sanity lol)

Is there some trick to the stone Guardians? They are taking multiple minutes to take all of them down on my rogue. I can easily do the lycan king with my rogue so I'm not sure what I'm doing wrong

Somehow looks easier than the lycan king boss! Nice dodging skills tho you survived with 350k max hp!

Why not stand on the back side (the side with no core) during the boss fight? At least up until lvl 25 no mobs, not even dark elves, will attack you over there. Maybe it's different as you go higher. You can even shoot the guardians from there.
