Good on him for getting on the ground with the crew. I was a line cook for a good chunk of my late teens and early 20’s, and the best place I ever worked the head of kitchen would be there until midnight with us, scrubbing at pots and pans. The best part? Even the owner would get on the line when it was needed? It was a little Italian place, and it was his grandmothers recipes. He wasn’t always there because he owned a painting business on the side, but when he was there he’d be doing dishes, helping guests, doing food prep. It was a great environment. Can’t tell you how many times he’d come in just to make a few pizzas for all of us. Great leadership makes the job so much better, and that keeps people around. I miss the culture sometimes.

Was a chef for 9 years. I quit and never looked back. Still cook at home but now i have time to enjoy life, family, eating all while earning more and working less.

As a sous chef I can attest those 14+ hour days are no joke!! That’s too bad he doesn’t get more free time tho, but such is the life of a chef :)):

For anyone curious, the restaurant is called Restaurant Yuu and it’s in Greenpoint in Brooklyn, NY. Super great, innovative food. They were featured in Eater a couple months ago (Title: How a Japanese Master Chef Created a Michelin-Starred French Restaurant - Mise En Place); the head chef is quite the savant!

All the chefs should stop agreeing with these abusive work hours 60-65 hours weekly and only getting paid for 50 hours it's not right.

I really enjoy your videos. I read somewhere you said he cooks when he comes home as a way to wind down and its very clear cooking is something he is incredibly passionate about but just how many days a week is that cause that's an exhausting schedule.
