That’s right – today I’m back here in Austin, TX to try out the Texas institution that “serves the best barbecue in the known universe!” Well, at least that’s what it says on the website. Should you believe the hype? Let’s see how much things have changed over the years and dive into every single piece of delicious meat – including their legendary brisket!

I took a cross country roadtrip for 3 months. This meal is hands down the best one I had. New Orleans had some incredible food, some killer tacos in La Jolla, a great steak in Yellowstone, a phenomenal crabcake in Maryland.

This meal stands above them all.

Franklin BBQ is excellent. Had my first experience there 3 or 4 weeks ago and Aaron was just hanging out like a normal guy and making sure his patrons were happy with the food and service. Top notch place.

I deliver ice to Franklin bbq occasionally and it was always a treat to get offered food at the end especially slabs of brisket cut by Aaron himself.

I'm sure that Franklin's hasn't degraded. It's just that so many others have really stepped up their game! Even north of the Hill Country has amazing Q. From Goldee's to Hard Eight and even Feedstore (and more). Hard Eight has my favorite brisket (but I'm a mesquite fan) 😁 and their chicken rules too.

Texas BBQ is all about the smoke and the wood used to impart that flavor. I am disappointed that Arnie did not comment anything about the smoke flavor. Everything he said was about moist this and moist that. I think what makes Franklin's unique is how the smoke flavor goes deep into the meat.
