A decent scholarly Introduction to the Bible and a decent History of the Church. Some familiarity with Aquinas - (a Reader, an Introduction). Other big names, Ignatius of Loyola, Newman etc. Familiarity with the Vatican II Documents, Papal Encyclicals. Perhaps subscribe to the (free) online Jesuit Journal: Thinking Faith. Poetry: Gerard Manley Hopkins, Francis Thompson, Catholics both, - but read all poetry!
In short, follow your interests in your reading, what you are curious about, and definitely don't stick to just 'Catholic' books, although the legacy of the Church in literature and thought is unparalleled in history by any other institution.
