Strawberry Mascarpone Galette

Ingredients:

For the crust:

• 220g plain flour
• 40g icing sugar
• 1/4 tsp salt
• 110g unsalted butter
• 1 egg
• 1-2 tbsp iced cooled water

For the filling:

• 250g mascarpone
• 2 tbsp (30g) icing sugar
• Zest of 1 lemon
• Juice of 1/2 lemon
• 1 tsp vanilla extract
• 250g strawberries, sliced

Egg wash: 1 egg yolk + 1 tbsp milk

For garnish: crushed pistachios, icing sugar

Method:

1. In a bowl, combine flour, icing sugar, salt, and butter. Rub the mixture between your fingers or use a stand mixer until combined. Add the beaten egg and mix until it forms a ball. If the dough is too dry, add 1-2 tablespoons of ice-cold water. Wrap the dough in cling film and refrigerate for at least 30 minutes.
2. For the filling, whisk together mascarpone, icing sugar, lemon zest, lemon juice, and vanilla extract until well combined.
3. Roll out the dough on a baking parchment into a 30cm diameter circle and transfer it to a baking tray. Spread the filling evenly in the middle of the circle, leaving about 5-6cm from the edges free. Arrange the strawberry slices on top and fold the edges of the dough. Brush the crust with egg yolk and sprinkle with crushed pistachios.
4. Bake in a preheated oven at 190C for 30-35 minutes or until golden brown. Once baked, let it cool slightly and dust with icing sugar before serving. Enjoy!
