NO PICKPOCKETING IS NECESSARY. It's much faster and easier to do this. As soon as you agree to sell the amulet, back out of the dialog while he is still talking, open your inventory and drop the amulet on the ground. Wait until he gives you the 500 gold, pick the amulet back up and repeat the process. Enjoy 😁
