If you use watercolur like that there will be no difference between acrylic and watercolor . One more thing left one will be also good if you use round brush for smooth stroke

Water colour is supposed to be applied WITH water,
The first one you have done should have worked better than the second one if you have taped the paper down and also used a thicker paper

My tip is to use good paper normal printer paper can't hold water and the paint will bleed through the next page
