In the video, I'm making double the amount of what is written here, but for a family of 4 this should be plenty.

Tomato Basil Soup

2 tablespoons and 2 teaspoons extra-virgin olive oil
2 1/2 carrots, peeled and chopped
1/2 large yellow onion, chopped
1 1/2 teaspoon dried basil
42 ounces whole Italian-style tomatoes in purée (canned)
7.25 ounces) low-sodium chicken broth
1 cups heavy (whipping) cream
Kosher salt to taste
Freshly ground black pepper to taste

Crostini Bread

1 stick unsalted butter, at room temperature
1/2 cup freshly grated Parmigiano-Reggiano cheese
3/4 teaspoons kosher salt
3/4 teaspoons granulated garlic
1 tablespoons finely chopped fresh flat-leaf parsley
1 baguette, cut diagonal into 3/8-inch-thick slices

Welcome to Eye in the Kitchen, today we're testing the Nordstrom Cafe tomato basil soup and crostini recipe. It's definitely one of my favorites when at the cafe.

You can find the ingredients for these recipes in the description of the video below.

To make the garlic butter, mix all the ingredients except the parsley and blend them, once blended, add the parsley and mix it in. Cut the baguette diagonally so you get larger pieces, then spread the butter generously on the bread. It should take 20-25 minutes in the oven at 350 degrees, I like mine at 25 minutes.

Warm the oil in a pot and then add the carrots, onion, dried basil and sauté, stirring occasionally for 10 minutes. Add the tomatoes including the purée and bring all this up to a boil, once boiling reduce the heat to low and simmer for 20 minutes.

Remove the soup from the heat and either use a wand type immersion blender or food processor working in bunches. Once fully blended put the soup on the heat again, add the heavy cream, and mix it in.

Add salt and pepper to taste, but do add plenty of salt as it'll taste very bland without it. Garnish the soup bowl with fresh basil.
